Thai Hong Cha, a red tea from Chang Mai, in the north of Thailand. This great black tea has unusually large leaves and comes from 60-year-old tea trees. The taste is unusually fruity, like red wild berries, but also a little honey-like, wild and tropical. The cup is dark red and clear. The honey note is even more pronounced in the scent. We suspect a clear influence from small cicadas that have infested this tea. The feeding spots are enzymatically demarcated by the plant. This pre-fermentation creates this typical honey-like taste. A great speciality is offered to us from Thailand for little money.
