Tie Guan Yin, the iron goddess of mercy, is a true classic of Chinese tea culture. According to legend, it goes back to a myth. The goddess Guan Yin appeared in a dream to a farmer who was suffering from famine and who had previously purified in her temple. In gratitude for his pious deed, she gave him a small plant that grew in a cast-iron pot behind her temple. The plant was, of course, the Tie Guan Yin cultivar in question.
The taste is characterized by a strong floral scent, similar to the smell of lily of the valley. How fitting, since the tea is harvested in Fujian in May. On the tongue, it is reminiscent of melted butter over white asparagus. A special tea that every tea lover should know!
